Chicagoland Chef Dishes on Touring With Celebs

What do country star Eric Church, pop star Sam Smith, and rock band Greta Van Fleet have in common? They’re all being fed by Elburn chef Bob Schneeberger — this week.

Schneeberger owns and operates HSG Catering, a catering company for touring artists across the continent.

Schneeberger got his break catering for WWE, where he built his signature 53-foot mobile kitchen to accompany the organization to smackdowns and wrestlemanias. Since then, he’s built a portfolio of clients that includes Taylor Swift and the Rolling Stones as well as fests like Lollapalooza and Country Music Assocation Fest.

What’s he cooking lately? Schneeberger and his eight staffers are feeding 150 crew members breakfast, lunch, and dinner on Eric Church’s tour. This week’s menu includes:

  • Bone-in pork chops with a cherry sauce
  • Red grouper
  • Prime aged flatiron steaks
  • Heirloom baby carrots
  • Roasted shishito peppers with green beans.
  • Magic cake, which separates into three sections when it cooks

Schneeberger couldn’t recall any weird requests — you know I asked — but he does regularly make Church a post-show burger.
